The Vegan Family Cookbook Banana Bread Recipe:Yields 1 large loaf, or 4 small mini loafsIngredients:2 cups flour (you can use half white and half whole wheat flour if you prefer, I used all white)1/4 cup sugar1 tsp. baking powder1 tsp. egg replacer powder1/2 tsp. baking soda3/4 tsp. salt2 very ripe bananas, mashed1/4 cup plain soy milk1/4 cup silken tofu (soft, not firm)1/4 cup extra light olive oil2 tsp. vanilla1 tbs. cinnamon (optional, I added it because I love cinnamon, you don't have to if you don't want to)* Preheat oven to 350 Degrees F.1. In a large bowl whisk together the flour, sugar, baking powder, egg replacer, baking soda and salt.2. In a blender, blend bananas, soy milk, tofu, oil, and vanilla until smooth.3. Add the contents of the blender to the contents of the large bowl and mix with a spoon just until combined.4. Spoon batter into an oiled loaf pan (or four oiled minis).5. Bake for 55 minutes or until toothpick inserted in center comes out clean. (Cook time was about 35 minutes for the mini loafs.)Enjoy! =)
